Yerba Mate in the Uruguayan Tradition

Yerba in the Uruguayan tradition is usually despalada — stemless — and ground fine, which makes for a dense, powerful brew. Uruguay drinks more mate per person than any other country. Note that the tradition is about cut and identity, not where the leaf was grown: much of the yerba sold by Uruguayan brands is grown and processed in Brazil.
